Japanese Chicken Yakitori Recipe Ingredients

Get ready for a culinary adventure with a delightful Japanese Chicken Yakitori recipe that will steal the show!

For the Chicken

• Boneless Chicken (breast/thighs) – A key protein source that ensures tenderness and juiciness; substitute with firm tofu or assorted vegetables for a vegetarian version.

For the Marinade

• Garlic – Adds depth and aromatic flavor to the marinade; fresh garlic is recommended for the best taste.
• Ginger – Provides a refreshing zest that balances sweetness; prefer fresh for optimal flavor.
• Soy Sauce – The base of the yakitori sauce, delivering an umami kick; use tamari or coconut aminos as gluten-free options.
• Red Wine or Mirin – Contributes a sweet complexity to the marinade; if unavailable, substitute with white wine mixed with a pinch of sugar.
• Brown Sugar – Sweetens the sauce and aids in caramelization, enhancing the overall flavor; no direct substitutes recommended.
• Rice Vinegar – Adds acidity to counterbalance the sweetness; distilled vinegar can work as a substitute if necessary.
• Cornstarch – Thickens the sauce for that velvety texture; essential for achieving the right consistency.

For Grilling

• Wooden Skewers – Necessary for grilling the chicken; soak them in water before use to prevent burning during cooking.

Step‑by‑Step Instructions for Japanese Chicken Yakitori Recipe

Step 1: Soak Skewers
Begin by soaking your wooden skewers in water for about 10 to 20 minutes. This crucial step prevents them from burning while grilling. While the skewers soak, get your grill preheated to medium-high, ensuring a lovely char on those chicken pieces later.

Step 2: Make Yakitori Sauce
In a medium bowl, create your yakitori sauce by combining soy sauce, water, mirin or red wine, brown sugar, and rice vinegar. Mix everything well until the brown sugar fully dissolves. Set aside a portion of this sauce for basting, as it will take your Japanese Chicken Yakitori to the next level.

Step 3: Prep Chicken
Prepare your chicken by trimming away any excess fat, then cut it into 1-2 inch chunks. For extra tenderness, lightly pound the pieces with a meat mallet. This preparation helps the chicken absorb more flavor from the marinade, enhancing the overall taste of your Japanese Chicken Yakitori.

Step 4: Marinate Chicken
In a bowl, combine minced garlic, grated ginger, and a dash of pepper with a portion of your prepared yakitori sauce. Add the chicken pieces to the mixture, ensuring they are well coated. Allow it to marinate for at least 10 minutes; longer if you can, to deepen those savory flavors.

Step 5: Thicken Sauce
Next, take the reserved yakitori sauce and bring it to a boil in a saucepan over medium heat. In a small bowl, mix cornstarch with a little of the boiling sauce to create a slurry. Stir this slurry into the boiling sauce, cooking until it thickens into a glossy consistency, perfect for glazing.

Step 6: Grill Skewers
Now it’s time to thread the marinated chicken onto your soaked skewers. Place them carefully on the preheated grill, adjusting the temperature to medium-high. Grill for 8 to 12 minutes, making sure to turn the skewers regularly and baste with the thickened sauce. The chicken should be glossy and cooked through, reaching an internal temperature of 165°F (74°C).
